Potato Cheese
6 oz. of mashed potatoes,
2 lemons,
6 oz. of sugar,
2 oz. of butter.
Grate the rind of the lemons and pound it well with the
sugar in a mortar, add the potatoes very finely mashed; oil the
butter and mix this and the lemon juice with the rest of the
ingredients; when all is very thoroughly mixed, fill the
mixture in a jar and keep closely covered.
